Growing up these were the most requested things in my house by my friends. Our cook made the best aloo’r chops.
These are my ode to her.
Also, these are super easy to make. To make a vegetarian option sub the protein with cubed cheese.
Ingredients
- 4 to 5 medium sized potatoes
- 1/2 lbs ground beef
- 3 to 4 Thai chilies
- 1/2 teaspoon onion powder
- 1 teaspoon garam masala
- 3 garlic cloves
- 1/2 inch ginger
- 2 eggs
- 2 cup breadcrumbs
- 1/2 grapeseed oil or high smoke point oil of choice
- 1 tablespoon ghee
Directions
- Peel and boil potatoes and mash while still hot — so all the steam is able to escape resulting in less moisture in the chops and fluffier results. (Boil potatoes approximately for 25 minutes.)
- In a separate pan add in oil or ghee add in ground beef and cook until beef is separated seared well, add in salt to taste, onion powder, garam masala and chopped Thai chilies.
- Wait till the beef cools down — so it can be handled into stuffing into the mashed potatoes.
- While the meat stuffing cools — add in melted or softened ghee and salt give it a good toss to incorporate.
- Make a potato pancake with your hands about 2 and a half inches wide and stuff a teaspoon worth of mixture and form into a ball and then slightly press down to make a disc like ball. Should make about 8 to 10 chops.
- Dip chops into beaten eggs and then bread and fry at 325° in a shallow pan — 1 to 2 minutes on each side.
- Drain oil on paper towels and eat as a snack with a side of hot sauce or with some rice or pilaf.
