No long drawn out story to this recipe. I was trying to find some ideas on how to oven bake these chicken quarters and I came across a recipe that suggested to brush some soy sauce under the skin of the chicken. And I thought to myself I love soy sauce way too much just to brush it on.
Ingredients
- 2 skin-on chicken quarters
- 1/2 cup soy sauce
- 1/4 cup black vinegar
- 1/4 cup mirin
- 5 to 6 red Thai chilies
- 6 to 7 garlic cloves
- 1 tablespoon sugar
- 1 cup chicken stock (optional)
Directions
- In a ziplock bag or tupperware — combine soy sauce, black vinegar, mirin, sugar and a cup of water or chicken stock. Add in crushed garlic cloves and chopped Thai chilies to the mixture and give it a quick mix to make sure all is combined well.
- Add in the chicken — make sure the chicken is submerged in the marinade and marinate it overnight in the fridge.
- Take the chicken out an hour before you plan on putting it in the oven — so that it comes up to room temperature.
- Put the oven at 300° and arrange chicken and marinade in a rimmed baking dish and cover it with foil and bake for an hour.
- Remove the foil adjust the oven to 425° and bake for another 15-ish minutes.
- Serve with steamed rice of your choice and adding pickled side goes very well with the flavour of the chicken.
